Pork Recipes

Sweet & Sour Peppers with Pork
Serves 4

1 tbsp olive oil
2 red or yellow peppers, deseeded and thinly sliced
2 cloves garlic peeled and crushed
4 pork chops
2 tsp sugar
2 tsp white wine vinegar

Preheat grill to the highest setting. In a large frying pan, heat oil and cook peppers for 10 minutes, stirring occasionally till tender. add garlic and cook for 1 minute.
Meanwhile season and grill chops for 4-5 minutes on each side.
Add sugar and vinegar to peppers, and stir until sugar has dissolved. Stir in 1 tbsp water. Serve pork chops with peppers spooned over top. Serve with a baked potato & green salad.

 

Crispy Honey Roast Gammon

1 gammon joint
50g fine dry breadcrumbs
8 cloves
3 tbsp clear honey

Place joint in cold water and bring to the boil. Drain, repeat and simmer for calculated cooking time.
Place joint in roasting tin, remove rind and cut diamond pattern in fat.
Cover with breadcrumbs and stud with cloves.
Spoon warmed honey over breadcrumbs and cook in a pre-heated oven for 10 mins until glaze is crisp.

 

Pork Chop Parcels
Serves 4

4 pork chops
450g potatoes thinly sliced
butter or oil for greasing
1 onion, finely sliced
1 apple, cored & sliced
salt & ground black pepper
4tbsp lemon juice

Heat oven to 190*C/375*C/Gas Mark 5.
Butter or grease with oil 4 pieces of foil approximately 10 inches square.
Divide the ingredients between the 4 pieces of foil starting with a layer of potato, then onion, then the chop with the apple on top. Sprinkle salt & pepper and lemon juice on top.
Close up foil to form a parcel, and bake for 1 hour, or until the meat is tender. For crispier browner meat, the foil parcel can be opened for the last part of cooking.
